As you mentioned, the way to find the other ylands is by following the birds in the sky. They might be a bit difficult to spot if you don't look closely, I guess I don't know if you know, but you can craft a map as well - if you have it in your hotbar you'll unlock your path in the yland, so it will be easier to move around.

You can remove those floating bits with the Terraformer (with the remove terrain option), although this tool is only available in the Create mode (or you can cheat a little bit and add it to your Explore map by typing "/additem terraformer" in the console). You can always add the Creator Cube to those scenarios (by typing "additem creator_cube" in the console once you're in the scenario - this way you'll have access to all the items in the game, and you'll be invincible etc.
